ITALIAN  OLIVE  WOOD  COOKING  TIPS  PARADISE

We are extremely happy to start this new section on cooking tips.  We love to share with you all our favorites dishes..out of italian and south switzerlands world famous cuisine....every recipie will use somenthing from the olive tree ...oil ...olive ...combined in many different ways.. we always cook, using olive wood cuttlery...and clearly we use olive wood products all the way ....we will expande this section more and more ! we have some secret  recipie for chocolate cream   .. it`s worth come back to find out ....we wish you  " bon apetit.."

RISOTTO alla MILANESE

  •  ingredients x  2  person :
  • 1 dose yellow SAFRAN powder
  • 2 slice of garlic + 1 onion
  • 2 small cups ( ca. 1 dl each ) of white rice 
  • olive oil extra virgin from italy
  • 1 glass of white  or  red  wine
  • 1 spoon sea salt
  • 1 vegetable  stock cube
  • 1 dose  ( ca. 50 gr. ) parmesan cheese

 

  • PREPARE SEPARETLY A POT  WITH  STOCK CA. 1 LITER
  • 1 STOCK CUBE + SALT + PEPPER + OLIVE OIL + QUIET A BIT OF CONCENTRATED TOMATOPUREE  + DRYED  MUSHROOMS   
  • WARM UP THE STOCK FOR A FEW MINUTES ..THEN  YOU CAN START TO WARM UP THE OLIVE OIL ..

PREPARATION

  • TIP 1 :  CHECK THE RISOTTO EVERY 3 MIN , TURN    AND    POUR A LITTLE STOCK
  • MAKE SURE THE  STOCK  IS  COVERING  THE  RICE.!!
  • TIP 2 : THE LAST 5 MIN  WATCH OUT... .TURN THE RISOTTO ..DON`T LEAVE HIM ALONE !!
  • IT WILL TAKE 20 min. ( DEPENDING ON THE RICE YOU USE )

WARM UP SOME OLIVE OIL IN A POT  TILL IT IS  HOT ...PUT GARLIC AND OINIONS  PREVIOUSLY SLICED IN THE HOT OIL  AND WAIT TILL THEY TURN SLIETLY BROWN  ...DON`T WAIT TO LONG .!!  ADD  2 CUPS OF RICE ..LET IT FRY TOGETHER FOR 40 SECONDS..ADD 1 GLASS OF WINE  ( WHITE OR RED ) ..TURN TILL THE WINE EVAPORATE  ( ABOUT 1 MIN . ) ..THEN POUR THE STOCK ,PREVIOUSLY PREPARED , SLOWLY ...TILL IT COVERS THE RICE...NOW  WAIT 2 Min  ,TURN THR RICE ...OK ...FOR THE NEXT 15 Min  ONLY  ..TURN   ..AND ... WATCH ....POUR STOCK  3 -4  TIMES....AFTER  15 Min ca.  ADD  THE SAFRAN   POWDER  ... NOW  TURN  AND SEE THE  RICE BECOMING YELLOW ......AFTER  20  Min ..IT IS READY ..!!! TEST  THE  RICE  ...DON`T  OVER COOCK  IT.!!!  BETTER TO TAKE HIM AWAY FROM THE FIRE WHEN STILL A BIT RAW AND LEAFE HIM COVERED FOR 10 MIN. ADD SOME  OLIVE OIL OR  BUTTER   AND  SOME   PARMISAN  CHEESE   ON  TOP  ..GRATE THE CHEESE WITH ONE  OF  OUR   OLIVE   WOOD  GRATER....!!  SERVE  WITH  OLIVE  OR  RADISH  ( SEE THE IMAGES )  OR  TRY  WITH  HAM   OR  SALAMI  OR  SAUSAGE  OR  STEACK .....IT`S  A  GOOD  COMPANION  FOR  ANY  KIND  OF  MEAT....!!! NOW  IT`S  TIME  TO  EAT  ...BON  APPETIT  ยจ!!!!
